Black is the color most people wear for dressy occasions, and now, it seems that it is becoming fashionable in food. Ebony eats are trendy in Japan and slowly appearing on Western plates. These foods include black soybeans, black rice, black vinegar, and black mushrooms. These foods are rich in flavor and nutrients. There's more - black sesame-seed cereal, black vinegar beverages, and black soybean coffee or cocoa drinks.
The Japanese culture focuses on the aesthetics of food and they love the odd and quirky, as this reflects a very Japanese mindset. The contrast of these black or purplish-black foods on a white plate may look interesting and dramatic, but also offer real nutritional benefit. Many of their healthful properties come from high levels of anthocyanins, which are powerful antioxidants.
Many Americans love blackberries when in season. They are a top source of antioxidants. We'll see how soon people will realize the benefits of eating more black. One day, instead of hearing parents tell their children to eat their green vegetables, we'll also hear them to eat their black foods.
